Appearance

Muscovies stand out in any flock. These sturdy, broad-bodied ducks have strong legs, red facial caruncles, and a solid build that sets them apart from other breeds. Black Muscovies are glossy and dark with white wing patches and a greenish shine in the sunlight. White Muscovies are bred for pure white feathers, with a few dark spots on the head or body now and then. Males are bigger and bulkier, with more pronounced caruncles. White Muscovy drakes can reach 10 to 15 pounds, and hens run about 6 to 7 pounds.

Meat and Eggs

Muscovy meat is lean, mild, and considered premium. White Muscovy meat is 98% lean, while Black Muscovy meat is a deep red, firm, and subtly rich, a favorite in both traditional and upscale recipes. Muscovy eggs are large, creamy white, and thick-shelled, with a rich flavor that works beautifully for baking and cooking. White Muscovy hens typically lay 120 to 200 eggs a year, and Black Muscovy hens lay 60 to 120 a season. They are also known as excellent brooders and mothers.

Temperament

Relaxed, curious, and friendly, Muscovies are one of the easiest ducks to have around. They communicate with soft coos, hisses, and a little tail wagging, so the yard stays peaceful. Muscovies get along well with other ducks and animals, and they can become quite tame, especially when raised from ducklings. That makes them a great fit for families, mixed flocks, and backyards of all sizes.

In 2007, a few ducks in the Shirk family’s backyard sparked a passion that soon grew beyond our fence line. Today, Shirlock Acres ships ducklings across the country, but our heart is still rooted in family care. Roger and Derek Shirk continue to raise every bird with the same honesty and attention they’ve always given their own. Curious how it all began? You’ll find the full story on our About Us page.
